Target price

How do I get a selling price from a target food cost?

1 min read

A target food-cost percentage works backwards from portion cost to a selling price. Suggested net = portion / (target / 100). If the selling field is VAT-inclusive, that net is multiplied by (1 + rate/100). A target of 0 or above 100 is rejected.

Formula

Suggested net = portion cost / (target food cost % / 100). The result is half-up to kuruş.

If VAT is inclusive, suggested = net × (1 + rate/100), with one half-up. If VAT is off, exclusive, or the rate is 0, the suggestion is net. A 100% target equals the portion cost.

Representative example: grilled chicken, 30% target

  1. Chicken thigh, rice and salad. Portion cost 47.10 TRY.
  2. Target 30%. Suggestion = 47.10 TRY / 0.30 = 157.00 TRY.
  3. Same target, selling field VAT-inclusive at 10%. Suggestion = 157.00 TRY × 1.10 = 172.70 TRY (one rounding).
  4. A target of 0 or 100.01 produces no result. This is not a market price. You choose the target.

Common mistakes

  • Treating the target as a sector average. Foodmarj does not publish one.
  • Reading an inclusive suggestion as net. If inclusive is selected, the figure includes VAT.
  • Expecting the suggestion to include commission. It is only the food-cost identity.

Questions

Which target percentage should I type?

Your own decision. Foodmarj does not publish a required percentage.

Does the suggestion include commission?

No. It uses portion cost and the target % (plus VAT if inclusive). Delivery commission is separate.
