How does takeaway platform commission affect profit?
If commission is taken from the VAT-inclusive ticket, it takes more than the same rate on net. That is Foodmarj’s default for delivery. Profit is still calculated on VAT-exclusive net sales. No platform rate is stored; you type the rate in your contract.
Formula
Commission = commission base × rate / 100 (half-up to kuruş). For delivery the default base is the VAT-inclusive ticket. Uncheck the box to use net sales.
After commission = net sales − commission. Portion profit = after commission − packaging − extra − portion cost. Margin = portion profit ÷ net sales × 100.
Recipe cost and food cost do not change. There is no stored platform rate in the product. Enter the rate from your contract.
Representative example: mixed pide, 20% VAT, 180.00 TRY selling price, 10% commission
- Mixed pide. Flour, minced beef, kashar, sucuk, tomato. Portion cost 58.04 TRY.
- Selling price 180.00 TRY, VAT-inclusive at 20%. Net = 180.00 / 1.20 = 150.00 TRY. Dine-in profit = 150.00 TRY − 58.04 TRY = 91.96 TRY.
- Commission 10% on the default VAT-inclusive ticket: 180.00 × 0.10 = 18.00 TRY.
- Delivery profit = 150.00 TRY − 18.00 TRY − 58.04 TRY = 73.96 TRY. Margin 49.31%. Food cost stays 38.69%.
- If you take 10% of net instead: commission 15.00 TRY and profit 76.96 TRY. That is not the default; it overstates profit.

Common mistakes
- Typing a platform’s rate from memory. Use the percentage in your contract.
- Taking commission on net and reading a higher profit. The default base is the VAT-inclusive ticket.
- Adding commission to food cost. Food cost stays the same.

Foodmarj does not publish platform rates. Type the percentage in your own contract.
Is dine-in commission also taken on the VAT-inclusive ticket?
No. The default gross base is only for delivery. Dine-in uses net sales for the rate you enter. There is no dine-in setting that switches the base.
